I made this cake about a month ago. I know, I should’ve shared it sooner. Especially since it was such a crowd pleaser with my family. However, work and life got in the way and before I knew it a month had passed. So has the beautiful summer weather it seems. If anyone feels like reminding England that its July and supposed to be sunny, that would be great.
As much as I love this cake; its simplicity, its humble inviting nature and its glorious taste. It didn’t come without its trial and tribulations. This photoed (and thankfully last) cake was actually attempt number three. After two attempts the previous day (my heart breaks at the amount of wasted lemons) I decided to give it one last shot on the morning of my sisters birthday meet up. THANK GOD it worked or I would’ve probably begun to question my ability as a pastry chef.
I have a big weak spot for a simple slice of cake. Add some fresh seasonal fruit and honestly, I’m yours. There’s something about a simple fresh sponge that just makes my heart sing. This beautiful loaf is light but packed with lemon flavour (three lemons worth!) In every slice you’ll find beautiful blueberry jewels, a generous amount of lemon syrup and sticky lemon icing.

The warm weather is making me lethargic.
It’s making me lay out in the park for hours on end. It’s luring me onto the grass. I lie there, unmoving, with no thoughts or worries apart from the occasional whisper of what I should concoct for dinner later. I become thirsty and, after a few hours, need some shade. Although the little energy I have used already makes me even more mellow. So I remain in my spot until I reluctantly stand. I’m usually dazed at the feeling of being on my feet again. I miss my mashed down patch of grass already.
Every year, when summer rolls around the corner, I seem to forget what its like to spend the majority of your day outside. After a few abrupt meetings with butterflies and bumblebee’s flying directly at me, I begin to fall in love with nature again. The feeling of soft stringy grass tickling in-between your toes and the sweet morning kiss of the sun on your skin as you eat your alfresco breakfast. Usually when I post on here, I plan ahead. I make whatever delicious treat I crave a week in advance and schedule a time on my days off to sit in front of my computer. Today though, I made something so ideal for this warm summer weekend that I had to post it today.
The weather here has been pure bliss; glistening sunshine that tickles the skin, ocean blue skies and a gentle breeze to cool you. My favourite kind of weather is a crisp spring or autumn morning however, this has some strong competition after today’s perfect weather.
For me, summer is about a plethora of vibrant plump fruits and vegetables. Cooking is so much easier in the warm weather. In winter you need to add other flavours to potatoes and lets face it, kind of boring root vegetables. It requires an effort. In summer though, fruits scream with their bright coloured skins and burst with lively flavours bringing your taste buds to life. No need for extras.
